    Mini Watermelon Cakes with Whipped Cream

    Looking for recipes for 4th of July dessert?

    I highly recommend dessert recipes with watermelon!  The bright red gives a pop of color, and you can easily fill in the white and blue with whipping cream ( or ice cream ) and blueberries.

    Mini watermelon cakes are an easy watermelon dessert in particular, because you don't have to deal with slicing each piece at your fourth of July party like you would with a large watermelon cake.

    How to cut watermelon ...

    The first thing you'll need to do with any cake made of fruit, is prepare the fruit! And for these mini watermelon cakes, that means dealing with an entire watermelon, i.e. cutting a watermelon into pieces.

    Don't worry! It's easy!  Simply set the watermelon on its side so that the length of the watermelon runs horizontally, and slice of either end to make a flat surface.  Then, place the watermelon on one of the flat sides you just cut, and shave off the remaining rind.

    Once you've removed all of the rind, then slice the watermelon into roughly 2 1/2" rounds.  Using a round cookie cutter, cut individual pieces of watermelon out of the slices.  You'll have lots of scraps leftover, but don't throw them out! Leftover watermelon can be used in a variety of ways, like fruit salad or in watermelon margaritas.

    How to frost mini watermelon cakes

    Next, pat the top of each individual watermelon cake dry with a towel, and then "frost" the mini watermelon cakes with whipped cream.  You can make your own, buy it fresh, or you can use the frozen kind ( whipped topping ).  I like using the frozen kind because it holds up a little better in the heat.

    Use an ice cream scoop to make the process easy!

    Watermelon Cake Toppings

    After you've frosted your watermelon cakes with whipped cream ( or whatever topping you chose ), press some slivered almonds into the sides and top each one with a blueberry for a healthy patriotic dessert.

    You can even get creative and try different toppings, like cherries or raspberries or even a tiny amount of jelly or jam.

    Ingredients

    • 1 medium sized seedless watermelon rind removed
    • 1 container of Extra Creamy Cool Whip
    • 1/2 cup slivered almonds
    • 30 Blueberries

    Instructions

    • Slice watermelon into four slices, each about 2 1/2 “ tall. Cut individual rounds out with a 1 1/2" round cookie cutter. Blot the top of each round dry to help the topping to stick.
    • Using a small ice cream scoop, put a dollop of Cool Whip on top of each watermelon round.
    • Press slivered almonds into the side of the Cool Whip, and top with a blueberry.
