how do you make sweet potato fries from scratch in an air fryer?

Cutting sweet potato fries is the biggest barrier to making them, but once you get into it, it isn't so bad.

Start with a peeled sweet potato, cut it lengthwise in half, then cut that half crosswise like the photo below.

From there, cut your slices/fries, trying to keep them as even as possible, about ½" thick at the thickest.

Once you've cut the sweet potato fries for the air fryer, toss them in olive oil and whatever seasoning you'd like, and place them in a single layer in the air fryer basket.

Can you make air fryer sweet potato fries with no oil?

You can - but the result will be more like a cooked sweet potato stick than a usual fry texture. I much prefer the crispier outside of a french fry made with oil.

do you need to soak sweet potato fries?

No, the natural sugar in the sweet potatoes will help them crisp.

Additionally, the reason for soaking regular white potato fries is to remove as much starch as possible in order to help with crisping. Sweet potatoes naturally have less starch than white potatoes, and therefor do not require the soaking to remove starch.

Why are my sweet potato fries soggy?

The main cause of soggy sweet potato fries is moisture. Moisture can be sitting on the outside of the fries ( a quick pat dry before adding the oil for cooking can help with this ), or moisture can build up because the fries didn't have enough space in the air fryer while cooking. Make sure your fries are in an even, uncrowded layer like the photo of fries in the basket above in order to get the best crisp.

Are fries healthy in an air fryer?

"Healthy" is different for many people, but cooking fries in the air fryer uses much less oil than deep frying, so in that regard, yes!
