6cupscooked, peeled, mashed sweet potatoesabout 4 large or 6 medium sweet potatoes
¾cuplight brown sugarpacked
½cupbuttersoftened
1teaspoonsalt
1teaspoonvanilla extract
2eggs
⅛teaspoonground nutmegoptional
Pecan Streusel
½cupchopped pecans
½cuplight brown sugarpacked
2tablespoonsbuttersoftened
3tablespoonsflour
Marshmallow Topping
2cupsmini marshmallows
Instructions
Preheat the oven to 375°F.
In a large bowl, mix together all of the ingredients for the Sweet Potato Mixture.Spread the mixture in a greased 3 quart baking dish ( or 9x12 baking dish, which is 3 qts )
Pecan Streusel
In a medium bowl, combine the ingredients for the pecan streusel together with a fork. This might take a little while to do, but keep pressing everything together with the fork until it all combines into large, flakey bits with pecans in them.
To Assemble
Top the sweet potato mixture with the marshmallows, then scatter the pecan mixture on top of that, careful not to break up the chunks of streusel too much as you scatter.
