Leftover Turkey Grilled Cheese
Stuffed full of spinach, turkey, gruyere, and apple butter: this is the perfect way to use up your leftover turkey!

- 4 ounces spinach
- ½ teaspoon olive oil
- 6 slices good quality bread
- 8 ounces gruyere cheese shredded
- 1 cup leftover turkey cooked, and torn into large pieces
- ½ cup apple butter
- 3 Tablespoons mayonnaise
Set a skillet over medium heat. Wilt the spinach in ½ teaspoon olive oil and then set aside. Spread ½ Tablespoon mayonnaise on one side of each piece of bread.
Place three pieces of bread, mayo side down, into the hot skillet. Top each piece with ⅙ of the gruyere, ⅓ of the turkey, ⅓ of the spinach, and roughly 2 Tablespoons of apple butter.
Cook until the edges of the bread are crispy and the cheese starts to melt ( about 3 minutes). Top each piece with the remaining cheese, and another piece of bread, mayo side up.
Carefully flip each sandwich so the untoasted mayo side is now down. Cook for another 3 - 4 minutes, or until the rest of the cheese melts.
Serve with more apple butter for dipping!
