Carrot Ginger Dressing
Just like the dressing from the Japanese Hibachi restaurants, this Carrot Ginger Dressing is fresh, sweet, and tart.
Servings: 8 people
- 10 oz carrots
- ½ sweet onion
- 2 " ginger peeled and roughly chopped
- ¼ cup honey
- 2 Tablespoons soy sauce
- 1 cup rice vinegar
- ½ cup salad oil canola, grapeseed, or something else mild/neutral flavored
Combine all ingredients in a blender or food processor, and process until smooth.
Serve over iceberg lettuce.
