Mix powdered sugar, butter, peppermint extract, and cream in a large bowl on low.
Gradually increase the speed up to medium as the sugar becomes more incorporated and less likely to blow up in your face.
Once the candy is completely combined ( it will have a very dough-like look to it ), remove from the bowl and shape into a log with approximately a 1" diameter.
Wrap the log in parchment paper, and freeze for 30 minutes, or until dough is very firm.
Remove from freezer, unwrap, and cut the log into ¼" slices.
Place the slices on a parchment lined cookie sheet, and freeze for another 30 minutes.
Melt the chocolate wafers according to the directions on the package, and dip each mint candy slice into the melted chocolate. Allow the dipped chocolates to set on the parchment lined cookies sheet for easy removal.
