Summer isn't over yet, at least not here in South Carolina, and the watermelon has been SO GOOD this year. So what's a girl to do when watermelon is dirt cheap and the thermostat is sky high? Make watermelon margaritas, of course!
This cocktail is similar to a classic margarita - but it has a little more texture. Still light and thin, but thanks to the force of a high-power blender like a Vitamix, you can toss all of the flesh of the watermelon into the blender with tequila, lime, and a dash of sugar and let it work some magic to create this tequila watermelon cocktail.
If you want to make a frozen version - it's just as simple. All you need to do is freeze the watermelon in cubes before tossing it in the blender. Blend it up, and voila! Frozen Watermelon Margarita!
Do you need a Vitamix to make Watermelon Margaritas?
Nah. But the texture won't be quite as frothy with a regular blender. It will still be delicious!
I've been buying whole watermelons and removing the peel and rind, but if you want to go uber easy you can buy the pre-cut watermelon and use that. Just make sure it's seedless!
Can I make this cocktail with watermelon juice?
YES! And you don't even need your blender. Just throw the watermelon juice into a cocktail shaker with the other ingredients and some ice, and shake shake shake until it all combines and chills. Strain it into a glass and you are all set.
You can see in the photos that this cocktail gets delightfully frothy - both from the hit of citrus in the limes and from the pulp in the watermelon.
It might settle a little, but only if you let it sit out for a while, and they never last long enough in my house for that to happen!
Careful though, this cocktail can be dangerously delicious! It gets almost all of its sweetness from the fruit itself, so don't let the gorgeous pink-red color fool you: this isn't some froufrou sugary sweet beverage.
It's a hard hitting, porch sipping, perfect for the boat or beach beauty that we can all pretend is kinda healthy because hey, it's fruit, right??

Ingredients
- 7 cups watermelon chunks
- ½ cup blanco tequila
- 2 Tablespoons sugar
- ¼ cup lime juice OR if using a high-power blender , two whole limes, peeled

- In the container of your blender, combine all of the ingredients. Blend until smooth. If it's especially hot, throw in a cup of ice to make the cocktail slightly frosty, otherwise serve on its own or over ice.
