    Summer is here, and so is grilling season! Grilled Zucchini and Squash are some of my favorite grilled vegetables. So fresh, full of flavor, and much healthier than many other grilling sides!

    When shopping for zucchini and yellow squash, make sure you pick firm squash with a minimal (or no) bruising or cuts on the skin. I like the small to medium sized squash. Larger ones can tend to be watery, particularly when cooked on the grill.

    How to cut zucchini for the grill

    How you cut zucchini and squash for grilling can drastically affect cooking time. I slice mine into ⅓" - ½" medallions. A lot of people like to do ribbons, but I find the medallions both more difficult to deal with when slicing, and later while cooking the squash on the grill.

    The medallions are surprisingly easy to work with! I don't even use a grill pan or foil, although I provide instructions for using all methods below, for those who wish to do so.

    How to Grill Zucchini and Squash

    • Prepare the grill. Heat the grill to high heat and oil the grill grates with a high heat resistant oil like grapeseed oil
    • Place zucchini and squash slices on the hot oiled grill grates
    • Cook for 3 - 4 minutes.
    • Flip and cook for another 2 minutes.

    How to Grill Zucchini and Squash in Foil

    • Prepare the grill just like above. Heat the grill to high heat and place a large piece of foil on top of the grill.
    • Place zucchini and squash slices onto the foil
    • Cook for 3 - 4 minutes.
    • Flip and cook for another 2 minutes.

    How to make Grilled Zucchini and Squash in a Grill Pan

    • Prepare the grill. Heat the grill and grill pan to high heat. Oil the grill pan with a high heat resistant oil like grapeseed oil.
    • Place zucchini and squash slices in the hot grilled oil pan.
    • Cook for 3 - 4 minutes, shaking occasionally.
    • Flip and cook for another 2 minutes.

    Grilled Zucchini and Squash

    A healthy grilled vegetable dish. You can use a grill basket, foil, or put squash straight onto the grill.

    Ingredients

    • 2 - 3 zucchini
    • 2 - 3 yellow squash
    • ¼ cup olive oil
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 Tablespoon lemon juice
    • 1 tsp salt
    • Grapeseed oil for grill grates

    Instructions

    • Slice the zucchini and yellow squash into ½" rounds.
    • Set grill to high heat. Pour about 1 Tablespoon of grapeseed or other high heat oil onto a balled up paper towel. Grab the paper towel with grill tongs and rub it along the grates to oil them.
    • Place slices of zucchini and squash on the grill and let sit unmoved for 3-4 minutes. Flip and grill for 3 more minutes. For softer zucchini, grill for 2 additional minutes.
